Why not just duplicate the floor, raise it up to ceiling height, and change the material if wanted? Seems to work fine and is much faster than the way demonstrated.
If you talk about the glass ceiling , I assume Ben did this way to demonstrate materials but also it allows for daylight to pass through so you don’t have to worry about lighting. But like always there are like billion ways to do something.

But u could easily give floor panels glass material ( sameone as on the windows he used), and it takes quiete a bit less of those.
Note also that Ben often switches ways of doing things just to illustrate different methods.
