I decided to go for manual retopology to get the nice edge loops and stuff, hopefully to get some decent animation when we get to that too!

The idea behind manual retopology is to have control over the loops.
You are missing a loop around the two eyes?
Retopology means also adding details where you need them and where not.
Like the feet, too much faces.
