Why does my mortar depth look like this?

It looks fine from the front but comparing it to the video, I noticed that the indents look quite different than mine. Note that I didn’t finish the video yet, I’m at about 7:00, but I wanted to find out what’s wrong before going further in the video.

Looks good to me.
Tiny differences may well be variations in the mesh density.
