So I select Player Collision, shows the same pink doors without windows as in the lecture, all good.
Then I select Visibility Collision and it all stays the same, no windows on those doors.

I suppose I should’ve chosen “Simple and Complex” Collision Complexity, since using “Simple Collision as Complex” does not represent the right Visibility Collision, and using “Complex Collision as Simple” does vice versa?
Yes simple and complex. Visibility uses the complex collision, so using simple as complex means physics and visibility are using the same (simple) collision.
