If anyone else is having trouble getting the knife to snap to vertices, I found out that you have to use “K” to go into the knife tool specifically.
If you go through the tool menu on the left, or use the Shift+Spacebar shortcut, for some reason the knife behaves differently (no vertex-snapping).
