For some reason my tank tracks won’t completely fit the curve in this tutorial.

I think you need to add more track elements with the array modifier.
It all depends on, scale, size, and shape. So if you copied Grant’s properties then it can go wrong. So where Grant is introducing a Blender feature, try to learn what it does in relation with the object you are working on!

PS. Don’t forget to apply scale on every subject.
