I would like to use Unity 2021.3.2f1. I was wondering if I will have any major compatibility issues with this course?

At this time, I believe the answer is yes, there are issues. We’re recommending using Unity 2020.3.20f (or any earlier version of 2020.3.x, but nothing past 2020.3.20 because a later version makes breaking changes from Dots .17 to Dots .5.
Just to confirm, downloading the package with 2021 does cause exception errors for me.
