I would advise a set with a challenging-to-model knight. Even though I liked the style of my own final pick, I ended up doing the lecture knight while following along because my selected knight was actually not enough of a challenge to model. i.e. Pick not only based on aesthetics, pick the one you think you will gain the most learning from. You can come back and do stylized/minimalist sets when done with this section 
(google “Allan Swart minimalist chess” - that was my absolute favorite aesthetically, but the most pointless to model)
