Prefab varients and mesh renderer

So I created a prefab varient, say B, of A whenever I change the mesh renderer in B it changes A
I though that prefab varients didn’t do this since changing the mesh filter of B doens’t change A

What exactly do you mean by changing the mesh renderer? What exactly did you do?

Have you already taken a look at the manual? The “note” might be interesting. Maybe you did what is described there.
