I had to knife cut the twisted pillar into tris, because the twisting was causing non-planar quads that looked nasty.

maybe because you didn’t apply smoothing and subdivision. And to do that correctly you need to prepare the mesh model a bit.
But you’ve solved a problem in your own way. Which is very good!
Good original pillars. The twisted ones needed much more loop cuts across its height. Cutting through afterwards has helped a bit.
Yeah, I would for high poly, but I’m trying to keep the low poly look
