I need to ask, what’s the point/difference in parenting the pieces to the board and parenting the black/white pieces to different empties and also the board?
Does it help with editing in the future or is it simple to teach more Blender mechanics?

I think Mikey was teaching the way parenting can be in different levels and groupings. It is a useful way of being able to select the board and all the chess pieces stay with it, should you be moving it in a scene for example. Though more recently collections can be used in a similar manner.

Yes, but it’s not a very good example.
But the use of EMPTIES is many.
