Wasn’t feeling the demon thing personally, so I decided to try and instead apply these techniques to make a stylized old man. I imagine he could be a fisherman or perhaps a jaded palace guard. Who do you think he is?

Nicely done; the crow feet outside the eyes are a nice touch. He does seem a touch smooth for an old man, but that’s just as easily explained by the art style.
You’re right I think, a few more wrinkles wouldn’t be amiss here
