Moving vertices not behaving how I want them to

So I was trying to shape the head as explained in the video.

I selected the top vertex then Ctrl+click the bottom vertex, then pressed G G to try and move it round and this happened. (It worked fine for me for the front of the face.)

Can anyone explain why/how this happens and how I can avoid it happening in the future?

You are extruding vertices / edges, not faces

I’m not extruding nor am I trying to though?

I’ve followed the steps he’s explained (and I know it works bcz I did the front the same just fine) I just don’t understand why it isn’t working for the back.

The last of your images shoes the problem and cause.

You have duplicate geometry. The black unselected vert that has not moved was in the same place as the selected one that did move.

press A select all verts press M and choose by distance.

It may well catch and merge away the superfluous verts.

If not then go to wire frame view, circle select over the known double vert only and M merge at centre.
