My mirror modifier doesn’t work seamlessly. When I paint on the mirror line it looks like this.
Is there a way that I can fix this?

Can it be that you have inverted faces? Normals pointing in the wrong direction?
I checked the normals and used ‘shift N’ to be sure. They seem to be right. But it didn’t solve the problem
The same problem occurs when I try to sculpt a basic sphere:
Check for inverted faces first.
Check the mirror modifier in edit mode has clipped together the centre line verts. They may not have met or might have gone past each other.
Apply the mirror modifier. Grant does not have one on his head. He is using the sculpting version called symmetry. Which he unhelpfully refers to as mirroring already being on in sculpt mode.
Ah you added more after I started investigating and listening to all the relevant lectures.
Stop using auto mirror on sculpts. Just click the axis you want symmetry on next to the butterfly icon top right menu bar.
NP5 is right on track.
Don’t use the mirror modifier on sculpt.
But apply it, before sculpt mode and use the symmetry
mentioned by NP5.
