Kept the resolution a bit lower, partly to spare my laptop and partly because I want to go for a lower-poly end result (might not make a difference what resolution I work in, but it might influence me to make features that read better in low poly?)

Good progress!
Don’t worry yet about final poly count. This will be addressed further along.
Just take care that your computer can handle it and stay more or less to the guidelines outlined by Grant. The latter because if you go too high poly too soon it makes sculpting more difficult.
