Something has gone horribly wrong here and I have no idea what. Any help?

Ah never mind, I already figured it out. I’ll leave this post and explanation just in case it happens to someone else.
At some point, I had filled in the faces along the inside centerline of the plane. This was causing the UV unwrap to act weirdly, somewhat like Grant’s example about the mirror modifier at around 5:30 in the video, which is what gave me the clue. To fix it, I marked a seam all along the plane’s outer centerline edges, then used L to select the island of Interior faces I had carelessly created, then just deleted them. Another unwrap and problem solved, looks like the video now.
