Some of the vertices make me think just grabbing with proportional editing was used, but clearly that’s not it. Some modifier?

The normal map is what is making them look uneven. It is a normal map that I have made using real geometry and then baked the normal.

Sorry for the delay in responding - many other things going on at the moment.
I think I’m more interested in the process you used to build those meshes - not the end result as such!
Box modelled and then sculpted the detail using the multi resolution modifier if I remember correctly.
