In the lesson, the car collides with the other objects when the instructor is demoing. I don’t believe that step was covered in the actual lesson. Do we just add a box collider to things like trees and rocks to make the car collide?

You are right. Collisions happen between colliders only . “Physical” collisions happen between non-trigger colliders only. If the car is supposed to be able to collide with a tree, both the tree and the car need a collider.
