I keep having this weird thing where visual studio is not recognising when I enter { or } and has a red scribble that when highlighted recommends I use the exact same bracket. Not sure what I am doing wrong.

Does MonoBehaviour have the same colour as your classname? If not, there might be a problem with Visual Studio. Please watch lecture “Fixing Visual Studio Problems” (currently #4).
