I’ve been reading around and have been looking to find an acceptable poly count for a character model?
With that said, how many polys are acceptable on:
A rock?
A piece of furniture ie A antique couch?

There are no rules.
It’s more a computer / project type / efficiency calculation.
You can see that with the gaming console race in the past decades. The models do increase in details, but are dependent of the cpu speed. Games for mobile do have low polys, because of the processing power and battery consumption.
Basically create high poly models. And from the model info of that design, you create low poly models that fit your need; cpu power, detail need, distance to the camera, other object on screen, animation (arms legs), etc …
