I’m having the problem where the game plays fast for the firsst few seconds of the game. Is there any way to make it so it runs the same speed throughout the whole game?

Hi Brenton, welcome to the community
This is caused by the Waypoint system that is being used, it is possible to smoothe it about, there are a few other posts on the forum regarding this - however - before you invest any significant time on that, be aware that later on you rip it all out and use Unity’s Timeline functionality instead.
If I were you I’d live with it for now, just use it for prototyping the flight path rather than worry too much about the speed changes.
