I thought I would be smart and inset AND extrude exactly 0.125 but when you do this it messes up loop cut:

Yes, one or two students have gone through to the other sides by going too deep. Really it can and perhaps should be less deep than you have there. Can become more problem with planking grooves if they cut through too.
I think trying to visulize the width of board that you would be using real life helps in getting things to look more realistic. Your brain knows what thickness boards and crates should be and if you are close you are pretty golden. It also helps in lots of different areas having that thin extrusion to work with rather than pieces popping out in places you don’t want. Only my opinion of course.
