Kinda bleh about this so far. Wings feel very clunky. Edges I feel should be more narrow or round look very blocky and the tail fin feels wide. Think I’m okay tweaking some of this, or is it safer to just leave it alone for now?

The curse of low poly. You could add more, soften things out a bit.

Creating a well made low poly model is an art in itself, and it looks really good to me. With some subdividision and supporting loops it would be really easy to make it look more smooth. But it’s really good for this challenge. Don’t worry about it too much and keep on going with the course
