In the roof part, my edge slide is going in the y instead of x, and if I get them to work it doesn’t preserve theUVs. What am I doing wrong, and how can I fix it?

You seem to be extending the size of the roof. That will distort the UVs. The non distortion is within the original size, moving a middle edge.
While you can extend things like that, it is in effect moving in a controlled manner rather than sliding an edge to a different position.
I would just make the size wanted and re unwrap the new roof.
