For some reason my diffuse map seems to be incomplete. I am following the lecture step by step and tried to re-bake it several times but it comes out the same. Any idea what might be causing this?

It is a common question searching bake black will find several.
Play with the extrusion factor and set Ray distance to zero. Tends to work. It is about playing with those parameters.
