Correct Mirroring

Hey everyone,

I started with mirror modifier but wanted to have a rounder model,
so I added a subdivision modifier again. But why does my model fall apart in the “clipping area”???
How are the zic zac line created ?!?!

How do I change the clipping/mirroring area ???

OK I know: Ctrl + R in Edit mode
