Whenever I try insetting by 1 it puts the face area basically to zero, tried other parameters and nothing works. What am I doing wrong?

I guess you are doing the pyramid insetting.
A common beginner issue, you have not applied the scale of the object. Applying rotations and scales is frequently repeated throughout the course for this sort of effect and problems not doing so causes.
