Does this course actually show how to build the realistic floating landscape that is in the course screen shot. (I copied the image below) I went through most of the videos quickly and I’m not seeing it. Maybe I’m missing something.

Pretty sure not. But I did not do much of that, maybe others can recall.
BUT that is the archived old 2.8 course I do not recall if that was the image originally associated with it. The new version is Blender environment Artist create 3D game worlds. But the low poly landscapes course does make a floating island all be it lower poly than the image you reference.
