Best practices on tracking and ignoring assets?

I had this question wandering about in my mind since yesterday. I know we should be careful about pushing to remote assets whose license forbids the distribution by third parties and those should be promptly added to the .gitignore file. However, is there a best practices from both a backup and from a collaboration point of view on what should be tracked/ignored when we get to materials/models/skyboxes/sprites/music files, etc.? (going from the assumption that no file is bigger than 100MB)

My best guess is that, to be on the safe side, all assets except scripts should be ignored and then keep a backup in an external drive or in a cloud service like dropbox or the like.

Is there like an “Industry standard” for this sort of situation?
