On the less geometry version i remove some details after trying and breaking the model every time. If you have any tips I would appreciate it.

I just can advise following the steps introduced by the teacher. You make it too complex for yourself to maintain two sets.
Try to learn Blender techniques and then apply them to your design. Don’t look what others do. Some of us have more Blender experience. Follow your own learning path. And adding details can be done later, when your basic set is done.

Over ambition can get you bogged down on a section. Especially if you start to have problems. By all means do a higher poly version as well, but keep it simple first time through the course would be my recommendation.
