When trying to manipulate control points on the curve, there is a documented issue with trying to do this in orthogonal view. When you switch to non-orthogonal view, you can grab them, but this can introduce tilt to the points which “warps” the road.
By accessing the Points dropdown of the curve, you can manually set the positions of the In and Out curve handles of each point. This is a bit tedious, but not much more than fiddling with each node anyway.
You can also use this Points section to just zero out the tilt of each point if you have dragged the handles in 3d view.
