I do the same as in the tutorial and have strange connected islands with plane wings. How to fix this?

This means your seams are not completely surrounding and isolating the wing from the body.
There is a possibility of duplicate geometry that is maintaining a connection that you can not see.
to check for duplicate geometry. In edit mode, press A to select all, then M, and choose ‘by distance’.
It will merge away most duplicates usually.
