I’m a sucker for neon, so I was playing around with emission. Anyone have tips on how to make the emission on these materials look nicer? I feel like I could make this look better.

Then you need more Blender knowledge on material nodes and other tricks.
Just experiment or continue and come when you have more knowledge … and there are of course online tutorial’s to be found.

As FedPete said, the answers will unveil as you continue through the course. Cycles can be useful, but you have not come to it yet I think. Point Lights are great “cheaters” when using Eevee, and, at least at where I am in the course, the only way to go for proper light bouncing effect in Eevee rendering.
