My version of the Troll

I had some difficulties with the Dyntopo and Remesh resolution / voxel size.
But I managed.

I haven’t been through the updated version of the course yet, so I don’t know if this gets covered, but try using Constant Detail under detail when using Dyntopo. I found that helped me until I got more used to using relative detail (Which I mostly use for fine detail now). And my experience with Remesh is similar to you. Personally I like the remesh modifier much better, and does the same thing as far as I know.

Hope this helps abit, good luck!

edit: I should add, that using constant detail will keep the detail of your brushes constantly at the size in detail size, whereas relative uses your relative distance from the model to determine the amount of detail to add.

Yes it’s discussed. But, as usual, there are many things to keep track of.
Easy to mix up. But I understand the process better now.
I’ve reached a next level of blender usage. '
