Used a lot of steps as I wanted it to look smooth, now I’m realizing there must be another way to accomplish the same thing while avoiding so many resulting faces/edges/verts.

Yes, in the tools panel ‘T’ (left), when object selected, you can switch the option ‘Shading Smooth’.

Later on you will learn, to use a modifier. Which increases the amount of details, at the moment of rendering.
