For optimization I ended up using a decimate modifier at the end to un-subdivide as I was still about 20,000 tris at the end (I think the plant still looks reasonable at a fifth of that – nice geometry aside):

Point of attention. Your grass is probably shown in small size in the final composition. So high detailed topology isn’t needed. It’s nice to see bended leaves. But in the end, with massive grass particles, it does not show. And slowdown your render.

Agreed – I admit sometimes I have trouble just letting that go, especially when I’m looking at the model up close, even understanding. Something to get used to.
