Low Poly Knight, and questions

I’m not sure I understood this lecture. If you never apply the edge split, what’s the point? The model still has weird shapes in the end. I spent 2 hours making all the quads planer, and the horse looked really bad, even thought there were no blue spots of distortion anymore:

Then I did what the teacher said, and used edge split, with smooth shading on. The result was much better, it was what I wanted in the first place, but when I tried to put it on sketchfab, the horse was shaded smooth. It wasn’t low poly anymore. Then I tried applying the edge split and making the shading flat again, but the triangular shapes came back. It only looks good on blender.

Anyway, I’m confused.

Sketchfab has it’s own rendering settings. Typically I edit every material after uploading it to sketchfab.

But would the knight remain the same in a game engine, like Unity?
