To me “Triangulate” means, converting faces in triangles. One quad face, are two triangles.
You probable mean mesh density. More vertices around distinctive shapes, like ears.
This depends on how you use the object (orc). For Orc-face close up yes. For this course, it is enough to animate the Orc.
To easily increase the density it helps if you have loops around those areas. Then with loop-cuts you can increase the vertices count for details.
