Do you have Simulate physics enabled for the projectile? I do not, and thought that toggle should only have an affect if simulate physics is enabled.
Have you tried rebuilding?

No I dont have it enabled. Maybe what fixed it was me rebuilding from VSCode and not that option but since I rebuilt it after ticking that box, I’m not sure which one of the 2 fixed it. But those were the steps I took and after that it was working.
Ah, yep closing editor and rebuilding from VS code did it .

I had the same issue with UE5. However, after closing UE editor, compiling in Visual Studio, and then re-opening UE editor, the hit events were logged. Thanks to the other people on this thread for making that suggestion.
