I am trying to create chess materials, but for creating knight, I was not able to understand where to start, Suggestions will be appreciated.

Well follow the course.
Start with a copy of your standard base. 6:52
Resize it to Knight size.
Delete the back half.
Apply a mirror modifier
Use the top loop to extrude new geometry up.
