Although I put the rabbit in an asymmetrical pose, I thought I’d try sculpting anyway and see what happens. I was able to mirror symmetry without a problem on the head. For the rest of the body I just turned mirror off.
It’s certainly been educational learning what the sculpting tools can do. I really don’t like what the ears are doing where they attach to the head, but after some tinkering I finally decided to leave it and move on. As for the hair I may sculpt it later; I’m curious to see how the grass will be done and if I can apply that knowledge to the hair.

Absolutely fantastic!
No need to make it symmetrical if you have no intention of animating it in my opinion.
Also, hair and grass are very different.
Hair is far more complex and many more settings need to be played with to get it right, where as grass just needs to be vertex painted into the correct areas and can’t really be combed etc.
I would take the extra time to create a texture for your hair particle in texture paint by UV unwrapping your bunny and keep the fur quite short on the limbs head ears and back and quite coarse (change root thickness).
