The inset didn’t quite work out for me at first as it would scale weirdly. I found out that scaling the cube in edit mode makes the inset works as normal (inset by 1m, extrude by 1)

At the start you forgot to apply scale. If you don’t do that. You encounter the problems you’ve experienced.
